Yes, we cut off the crusts
(we're not peasants)
But why? Tradition, mainly. Also, it looks so nice. Or, as a friend of ours put it, "if I'm splashing out for a sandwich spread, the least you can do is cut the crusts off."
It's the look that makes the tea sandwich. And we know the Japanese eat with their eyes first. But taste matters too so we go strictly Kewpie. It's made with yolks only and rice vinegar, rather than distilled. The result is a milder, sweeter tang and velvety texture is velvety with umami undertones.

Legendary entertainer, all-round lovely person and the kind of woman you wouldn’t forget. Not her style, grace or perfectly appointed house. Nor her glorious laugh and Benson & Hedges poised between two beautifully manicured fingers. And definitely not her command of the great mid-century classics: devilled eggs, homemade salad cream, dainty salads, cakes, cookies, casseroles and, naturally, tea sandwiches. All while making it look effortless. We honour her name with fresh ingredients, generous portions, lovely presentation and the little things done properly. In her humble way, she’d be astonished and delighted.
